On the April 29, 2012 episode of Red Ice Radio, cardiologist Dr. William Davis stated (at 3:46):
“Wheat raises blood sugar higher than nearly all other foods. Not all foods, but nearly all other foods, such that two slices of whole wheat bread raise blood sugar higher than six teaspoons of table sugar. That’s a simple fact that you can see in any table of glycemic index, even though it’s often ignored.“
He then went on to describe how almost all wheat eaten in the United States today, and since the 80s, is from a dwarf strain, which produces a far greater yield but has contributed to the current obesity epidemic.
